We're not talking processed carbs. Nope! NOT TODAY. We're talking high fiber, nutritious lentils. I must admit, they're pretty irresistible in pasta form. This is a dish I used for lunch prep, but it also serves as a great dinner dish. If you're looking to add more fiber and vegetables to your diet as well as a dish that will fill you up, this is the one. Even though it's heavy on the veggies, the parmesan truly ties this delicious recipe together.
